Cinnamon Swirl Loaf

Ingredients

7 to 7 1/2 cups all-purpose flour

2 instant yeast

2 cup milk

1/2 cup sugar

1/2 cup butter

2 eggs

1/2 cup sugar

2 tsp salt

2 tsp ground cinnamon

1 pinch ground mastic

Preparation

In a large mixer bowl combine 3 1/2 cups of the flour and the yeast. Heat milk with 1/2 cup sugar, butter and salt until warm, stirring constantly to melt the butter. Add to the dry mixture in the mixing bowl and add the eggs and the mastic. Beat in low-speed with the mixer for 1/2 minutes scraping sides of bowl constantly. Beat 3 minutes at high-speed. With your hands stir in enough of the remaining flour to make a moderately soft dough. Turn out on lightly floured surface and knead till smooth and be elastic for 5 – 8 minutes. Shape into a ball and place it in a greased bowl turning once to grease surface.

Cover and let it rice in warm place till double for about 1 hour. Turn out on lightly floured surface. Divide in half, cover and let rest for 10 more minutes. Roll each half into rectangle, about 15X7 inches. Brush entire surface with water.

Combine the 1/2 cup of sugar with the ground cinnamon. Spread each rectangle with half of the sugar – cinnamon mixture. Roll dough up, beginning with narrow side. Seal long edge and ends by pinching together. Place sealed side down in a 2 greased loaf pans. Cover and let rise in warm place till almost double about 35 to 45 minutes. Bake in 180 degrees Celsius or 375 F till done for 35 to 40 minutes. If it starts burning on the top too quickly cover with foil the last 15 minutes before end. Remove loafs from pans and cool on wire racks.

Ingredients

1200 gr bell peppers (green, red, yellow) cutted in wide slices

4 leek sausage cutted in fat slices

1 can chopped tomatoes

1 cup chopped parsley

2 green chilli peppers (optional)

1/2 tsp sugar

1/2 chopped onion

2 garlic cloves chopped

1/2 cup olive oil

Olive oil for frying

Salt, Pepper

Preparation

In a frying pan, fry the bell peppers in hot olive oil until golden brown. Take them out on towel paper to dry. In the same pan fry the sausage until golden brown too, and let them dry on a towel paper.

In a casserole add the 1/2 cup olive oil and saute the onion with garlic until white. Add the tomato sauce and 1 can water and reduce the heat after start boiling. Add the chilli peppers, parsley, sugar, salt, pepper and let them cooked covered. Mix occasionally and let the sauce stay with the tomato and olive without water.

In a wok add the sauce, the bell peppers and the sausages and let them boil once or twice with the sauce.

Lemon Peas with Dill

Ingredients

1 small onion chopped

1 cup dill chopped

500 gr peas

2 potatoes cutted fat slices

4 carrots cutted in fat slices

3 lemon (juice)

1 cup olive oil

Salt, pepper

Preparation

Saute in olive oil the onion and the dill in high heat. Add 1 litter water, the peas, the potatoes, the carrots and the lemon juice. Season and let it boil once. Reduce the heat and let it cooked for 3/4 or an hour. Add water if needed. Let it cooked until stay with the olive oil and the lemon juice. Mix now and. Serve warm.

Hazelnut Chocolate Pie

Ingredients

1 cup butter (room tempereture)

5 eggs

1 cup sugar

1 cup chopped hazelnuts

250 gr. dark chocolate

250 gr. milk chocolate

1 cup self raising flour

1/4 cup cream

Glaze

1/2 cup cream

125 gr. dark chocolate

Preparation

Preaheat the oven in 180 C or in 350 F. Beat butter and sugar together in a mixer in slow. Add the eggs and the flour. Meawhile heat the cream with the chocolates and make them liquid. Add chocolate mixture in to the flour mixture and beat them in slow. Let them mix well. Grease with olive oil a 28 cm pan and add the mixture in it. Bake for 30 or 45 almost minutes it depence of the pan. Make the test with the knife to see if it is baked in the middle of the cake. Take the pan out of the oven and let it cool. While it is warm the cake will be fluffy. When it is cool it will fell down.

Meanwhile heat the cream for the glaze and add the dark chocolate. Spread the glaze over the cake and let it cool before you serve it. You serve it in room tempereture.

Tomato Sauce Veal

Ingredients

800 gr. caserole veal in cubes

1 wineglass wine

1 canned diced tomatoes

1 Tbs tomato paste in a glass of water

1 small onion chopped

3/4 cup olive oil

1/2 tsp sugar

2 spices

2 cloves

1 bay leaf

1 pinch cinnamon

salt, pepper

Preparetion

Wash the veal and let it dry. In a caserole heat the olive oil in high heat and saute the veal until light brown. Add the onion and let it white. Add the wine and let it boil once or two times. Add 2 or 3 glasses of water until boil and reduce the heat in half. Let it cooked the veal with the water for 1/2 hour or a bit more. Add the chopped tomatoes, the tomato paste water, the spices, the cinnamon, the cloves, the bay leaf and the sugar. Let it boil in high heat once and reduce the heat in half or a bit less. Let it cooked slowly for 1 hour or more until tender. Check it from time to time to check the sauce not burned. Season with salt and pepper. Serve hot with spaghetti, fried potatoes. potato puree, rice, egg pasta.

Lentil Soup

Ingredients

250 gr. lentils

1 Tbs tomato paste (disolved in a glass of water)

1/2 cup Olive Oil

1 garlic clove chopped

1/2 onion chopped

2 bay leaves

1 Chicken or Beef broth (Maggi, Knorr)

Salt, Pepper

Preperation

Clean the lentils and wash them well. Let them aside to dry. In a caserole heat the olive oil and add the lentils and saute them for 3 – 4 minutes mixing well. Add the tomato paste water, more water to cover, the garlic, the onion, the broth, the bay leaf. Let it boil once in high heat and reduce the heat. Season the soup. Let the lentils cooked for 3/4 hour or 1 hour in medium heat checking from time to time if they have enough water to boil. Serve warm with red wine vinegar or balsamic vinegar.

Greek Briam

1 kgr potatoes in slices 1 cm thick

800 gr courgettes (zucchini)

4 cooking tomatoes blendered

1 large onion chopped

2 garlic cloves in slices

1 cup chopped parsley

1 Tbs tomato paste (disolved in a glass of water)

1 cup olive oil

salt, pepper

Preperation

OLYMPUS DIGITAL CAMERAIn a baking pan lay down the potatoes, springle the onion and the garlic, add on the top the courgettes, season with salt and pepper.

Add on the top the blendered tomatoes mixed with parsley, the olive oil and the tomato paste. Shake the pan to mix well the liquid ingredients.

OLYMPUS DIGITAL CAMERABake in the oven in 200 C or 375 F for one or more hour in bottom up oven. In the middle of the hour check the sauce if it is well mixed with the ingredients and with a spoon springle the sause over the vegetables.

Pasteli (Sesame Honey Bars)

Ingredients

500 gr. herb honey

500 gr. sesame seeds

olive oil to grease

Preperation

Toast in a pan the sesame seeds until golden brown. Boil in low heat the honey for 10 minutes. Remove from heat. Add the sesame seeds into the boiled honey. Meanwhile grease a kitchen paper with the olive oil and cover the paper with the mixture of honey and flattened with a wooden roll in 1 cm thick. Let it cool for 10 minutes. With a greasy knife grabar in cubes or triangles the sesame bars. Let the bars cool and cut with your fingers the cubes.

Tip: Do not overcook the honey and been caramelized.

Fasolada (Greek Kidney Bean Soup)

Ingredients

500 gr. kidney beans (dry)

2-3 carrots (slices)

celery (chopped)

1 onion (chopped)

2 Tbs tomato paste

1 beef stock

1 cup olive oil

Salt, Pepper

Preperation

Soak the beans overnight to water. In a casserole the day after boil the beans with water (covered the beans) until tender (3/4 hour). Add the olive oil, celery, the carrots, the onion, the stock and the tomato paste until cooked. Seasoning the soup with salt and pepper and serve hot.
