Fasolada (Greek Kidney Bean Soup)

Ingredients

500 gr. kidney beans (dry)

2-3 carrots (slices)

celery (chopped)

1 onion (chopped)

2 Tbs tomato paste

1 beef stock

1 cup olive oil

Salt, Pepper

Preperation

Soak the beans overnight to water. In a casserole the day after boil the beans with water (covered the beans) until tender (3/4 hour). Add the olive oil, celery, the carrots, the onion, the stock and the tomato paste until cooked. Seasoning the soup with salt and pepper and serve hot.

Greek Avgolemono Soup (Easy)

Ingredients

1 1/2 litter water

1 chicken broth stock (Maggi, Knorr)

1 1/2 cups rice (washed)

3 Tbls olive oil

1 egg

2 lemons (Juice)

Salt, Pepper

Preperation

Add into a pan the water, the stock, the olive oil and  the rice and bring to boil in high heat. Reduce the heat at low and leave it cooked the rice stirring occasionally. Meanwhile beat the egg with the lemon in a bowl. When the rice is cooked take the pan out of the fire and take bit by bit the broth of the soup and add it slowly into the lemon – egg bowl stirring very well. You must be carefull not to be cutted the egg and been in pieces. Add the avgolemono slowly into the pan with the rice mixing well. Add a pinch of salt. Serve hot with a pinch of pepper.

Chocolate Mosaic

 

Ingredients

 1 ½ tea cup butter

1 tea cup caster sugar

5 Tsp Cognac

5 Tsp cocoa powder

½ package ptiber biscuits

Preparation

 Melt the butter in a pan in medium heat. Set aside and add the sugar, the cocoa, the cognac and mix well. Add the biscuits and mix again well. Let the mixture aside in room temperature to get cool. Apply in a foil and wrap as a brick. Leave it overnight in the freeze. Cut in slices and serve cold or with ice cream.

Greek Fishermen’s Soup

Kakavia is a soup that the fishermen in Greece cook. Kakavia is a very tasteful soup that is cooked on the fishing boats with simple ingredients and with a mixture of various fishes. Sometimes the old times the fishermen used to use sea instead of water for the cook but now it is better to use normal water.

Today I will cook kakavia with a fish that there is only in Mediterranean sea. It is a most flavoured fish with white flesh for soups. The fish called scorpionfish and you must be carefull if you want to prepare properly as it has thorns and if you injured by them you will swell

So lay back and read carefully the way that fishermen in Greece cook their food.

Kakavia

Ingredients

1 scorpionfish or various fishes for soup mixed

1 litter water

celery leaves

1 potato

1 tomato

1 onion

1 carrot

1 crougette

1/2 cup olive oli

salt, pepper

Preparation

Clean up and pill the vegetables and prepare the fish. In a casserole add all the ingredients exept the fish. Bring to boil and let the vegetables cook in half in medium to slow fire. Add the fish and season the soup. Let all the ingredients cooked until tender. Take the vegetables and the fish out of the casserole and drain the broth.

Serve warm with lemon juice.
